English points twice: this for what is near, that for everything else. Serbian points three times. Овај is near the speaker, тај is near the person spoken to or has just been mentioned in the conversation, and онај is away from both. The middle term has no English equivalent at all, and learners who map овај onto this and онај onto that will find that Serbs keep using a third word they cannot place.
The second difficulty is that овај is not a fixed particle but a full adjective. It agrees with its noun in gender, number and case, and it does so in a pronominal declension slightly different from the ordinary adjective endings: овај човек, ова жена, ово дете, ови људи, у овој соби, с овим ножем, овога краја.
The third is the neuter ово used alone, pointing not at a noun but at a situation: Шта је ово? — What is this? In this use it never changes for the gender of what follows. Ово је моја сестра, ово су моји родитељи: the demonstrative stays neuter singular while the verb agrees with the real subject.

These are the rules for овај.
1. Three degrees of distance.
овај — near the speaker: this one here, in my hand тај — near the addressee, or already mentioned: that one by you, that one we were talking about онај — far from both: that one over there
The middle term is what English lacks. If a Serb hands you a book and asks about it, it becomes та књига the moment it is in your hands. If you mention a man in conversation, he is тај човек thereafter, whether or not he is present. English is forced to use that for both тај and онај, which is why translation out of Serbian loses information every time.
The whole deictic system is built in the same threes:

2. Declension. Овај follows the pronominal pattern, not the ordinary adjective pattern. Singular:

Note that neuter plural ова is identical to feminine singular ова: ова врата (these doors), ова кућа (this house). The noun tells you which.
3. Long and short forms. Овога, овоме, онога, тога are the older long forms; овог, овом, оног, тог the short ones. Both are correct, the short forms commoner in speech, the long ones preferred in writing when the word stands without a noun or when rhythm calls for a syllable. Људи овога краја in 19.12 could equally be овог краја.
4. Sentence-pointing ово. When the demonstrative points at a whole situation rather than a noun, it is neuter singular and stays so:
Ово је моја сестра. — This is my sister. Ово су моји родитељи. — These are my parents. Ово ме нервира. — This is annoying me.
The verb agrees with the real subject (је, су), the demonstrative does not move. Compare the adjectival use, where agreement is obligatory: ова моја сестра (this sister of mine).
5. Time expressions. Demonstrative plus time noun goes in the bare genitive with no preposition: ове године (this year), овог месеца, ове недеље, овог лета, ове зиме. The same holds for прошле године (last year) and идуће недеље (next week). English in and on have nothing to correspond to.
Two exceptions worth learning as words: данас (today), вечерас (this evening), јутрос (this morning), ноћас (tonight), летос (this past summer). These fused forms are far commoner than ово вече or ово јутро, which sound deliberate.
6. The former and the latter. In careful writing овај picks up the nearer, that is the more recently named, and онај the earlier: Марко и Петар су дошли; овај је ћутао, онај је причао — Petar (the latter) was silent, Marko (the former) talked. English inverts the intuition, so this must be learned deliberately.
7. Standing alone. Any of these can drop the noun and stand as a pronoun: Овај је бољи (19.10), Дај ми ону, Ово ми се не свиђа. Used of a person, the bare овај is brusque and can be rude — шта хоће овај? (what does this one want?) is not neutral.
Common Mistakes
Using ово where the noun demands agreement: ово човек, ово књига. Say овај човек, ова књига.
Forgetting the animate accusative: *видим овај човека. Say видим овог човека.
Mapping онај onto every English that: if the thing is by the listener or has just been mentioned, Serbian wants тај.
Adding a preposition to time phrases: *у овој години. Say ове године.
Treating ова as a plural for all genders: ова is neuter plural and feminine singular; the masculine plural is ови, the feminine plural ове.

Овај is the commonest hesitation noise in Serbian. Where an English speaker says er or um, a Serb says овај…, holding the vowel while the sentence is assembled: Он је, овај, отишао раније. Its rival is оно, used the same way. Nothing about this is written down, and it is the single quickest way to sound less like a textbook.
Овај наш, ова наша, ово наше is a construction with no English equivalent — the demonstrative added to a possessive to signal familiarity, exasperation or rueful affection: ова наша земља (this country of ours), овај наш народ, овај мој брат. It can carry warmth or complaint, and usually both at once.
Ово мало softens a quantity into modesty: ово мало хлеба што имамо, this little bread we have. Offering food, a host will describe an enormous spread as ово мало што има — this bit of what there is. Contradicting the disclaimer is part of the exchange.
Regionally, all three demonstratives are shared across Serbian, Croatian and Bosnian, spelled ovaj / taj / onaj in the Latin alphabet. What differs is frequency: tај is somewhat commoner in Croatian usage where Serbian would reach for овај. The Ijekavian овдје for овде is the only form of the set that changes with the reflex of jat, and it will be met in the citation below.
Овај свет and онај свет divide the living from the dead. Отишао је на онај свет is the standard euphemism for dying, and на овом свету for in this life. The pairing is old, appears throughout the folk poetry, and is one of the few places where the deictic system carries a whole cosmology rather than a location.

From Јазавац пред судом ("A Badger on Trial"), Петар Кочић, 1904 — a satirical courtroom scene in which David Štrbac, a peasant of the Bosnian Krajina, brings a live badger before an Austro-Hungarian magistrate and sues it for eating his maize. David plays the fool with great precision. The passage turns on овај and ово, and its language is Ijekavian and dialectal throughout.

Овдје (F.1) is the Ijekavian form of овде, from the same root as овај: the place-term of the near degree. Kočić's Krajina characters are Ijekavian throughout, so the course's Ekavian овде, свет, време appear here as овдје, свијет, вријеме.
Ово је права будала (F.3) — sentence-pointing ово of Section D §4, neuter although будала is feminine. The magistrate is not calling the badger a fool; he is pointing at the whole spectacle. That the demonstrative refuses to agree is exactly what makes the reference so wide.
Овај ваш цар (F.4) — demonstrative plus possessive, the construction of Section E, and here openly hostile: this emperor of yours, said by a Serb peasant about Franz Joseph to an Austro-Hungarian official. The line was written in 1904 under that administration's censorship, and Kočić was imprisoned more than once.

Part D — Grammar Notes for the Dialogue
A move is the ideal setting for demonstratives, because everything in the room is either in the speaker's hands, in the listener's hands, or across the room — the three degrees of Section D §1 made physical.
Ово је последња кутија (19.16) — sentence-pointing ово, neuter, although кутија is feminine. Contrast ова кутија је тешка (19.19), where the same word modifies the noun and must agree. The two lines are the clearest minimal pair the lesson offers.
Овај у кухињу, а онај у дневну собу (19.18) — both demonstratives stand alone as pronouns, the noun сто understood from the question. The near table and the far table, and а as the contrastive conjunction of Lesson 3. Note that neither goes into the accusative despite the motion: they are still nominative, echoing the subject of the preceding question.
Ове тањире (19.20) — masculine accusative plural. Тањир is masculine, so its plural accusative is тањире, and the demonstrative takes the feminine-looking ове because masculine and feminine share this ending in the accusative plural. It is a common point of confusion; the noun's gender, not the ending's appearance, is what governs.
Немој стављати (19.21) — the negative imperative, formed with немој / немојте plus the infinitive (or да plus present). Serbian does not negate the plain imperative in ordinary speech: not *не стављај, but немој стављати.
Ова врата (19.23) — neuter plural, identical in form to a feminine singular, exactly as Section D §2 warns. Врата is a plurale tantum, so this door and these doors are both ова врата, and only context distinguishes them. In 19.22 the same object appears in the accusative after кроз, unchanged.
Ову лампу (19.25) — feminine accusative singular, the only form in the whole paradigm ending in -у. Пре двадесет година is the bare genitive of time: after any number above four, the noun stands in the genitive plural.
Од оног у ком смо били (19.26) — онај standing alone in the genitive after од, with a relative clause hanging off it. This is the ordinary way Serbian expresses English the one that: demonstrative plus relative, no separate word for one.
С овог спрата (19.27) — с plus the genitive meaning from, off, the second use met in Lesson 17. Not the instrumental of accompaniment: the neighbours are not with the floor.
Овако ћемо (19.28) — the manner term of the deictic set, used elliptically with the future auxiliary and no main verb: literally this-way we-will, meaning here's how we'll do it. A very common opening for a proposal.
Овим темпом (19.29) — instrumental of manner without a preposition, the same bare instrumental as аутобусом in Lesson 17. Овим темпом, овим путем, овим редом are all fixed.
Вечерас (19.30) — the fused adverb of Section D §5, preferred to ово вече. The dialogue ends with овим кутијама, instrumental plural after међу, the last of the eight forms of овај to appear in the lesson.

овај (ovaj): O-vai. Two syllables, stress on the first, which is where the stress stays through the entire paradigm — О-ва, О-во, О-ви, О-вог, О-вим. Only овако, овамо, овуда move it to the second. Final ј is the glide of English boy, so the word ends in a diphthong: O-vigh, not o-VAI.
ова / ово / ови / ове (ova / ovo / ovi / ove): O-va, O-vo, O-vee, O-ve. Four forms distinguished only by the last vowel, and Serbian vowels are pure and fully pronounced — no reduction, no glide, no schwa. English speakers who blur unstressed final vowels will make all four sound alike, and the sentence will lose its gender.
овог / овога (ovog / ovoga): O-vog, O-vo-ga. The long form simply adds a syllable; the stress does not move.
овим (ovim): O-veem. The и is the long ee of seen, never the lax vowel of sin.
овдје / овде (ovdje / ovde): OV-dye, OV-de. The Ijekavian form of Kočić's text against the Ekavian of this course. In овдје the дј is two sounds in careful speech, though most Ijekavian speakers merge it towards ђ.
ц in ципеле (cipele): TSEE-pe-le. Always ts, as noted in Lesson 18.
Трсту (Trstu): TRS-too. A syllable with no vowel at all — the р is syllabic, carrying the beat by itself, as in црн, прст, трг. English has nothing like it; approach it from tr-r-r held steady.
завршићемо (završićemo): za-VR-shee-che-mo. Five syllables, a syllabic р in the second, and the future in -ћемо written solid onto the infinitive stem. The ћ is the soft affricate, distinct from ч.
